Tacos today? I make these amazing tortillas from cassava flour on our taco nights. There seems to be a shortage of regular flours so this may be the best time to try something new!
3 things to know about cassava flour:
1. Cassava flour is gluten, grain and nut free.
2.Cassava flour comes from the cassava plant and is a starchy tuber, so fairly high in carbohydrates.
3. 1 cup of cassava flour can be used for 1 cup of all purpose flour.
I use @ottos_cassava_flour and their tortilla recipe works perfectly every time. They also have amazing recipes on their instagram!
3/4 cup cassava flour
1/4 tsp sea salt
2 tbsp olive oil
1/3 cup warm water
1. Mix together ingredients, then divide into balls.
2.Roll each dough ball between parchment paper.
3.Place on a hot dry skillet, wait for one side to bubble then flip.
A few things I’ve noticed, is I always seem to add a couple teaspoons of extra warm water to keep the dough workable. AND I always triple this recipe to feed my family!
