Cashew sauce for regular pasta or veggie spiral pasta. This is what I’m serving up for dinner tonight. #meatlessmonday It’s a cashew based sauce over butternut squash and beet spirals.
How do you think it’s going to go? I’m going to be honest with you, I think this is going to be a tough night at dinner for my kids but Brad will like it. But then again he eats almost anything I put in front of him.
I’m going to post their reactions. I’m almost positive two of them will be horrified that this is dinner but I’m hopeful for one. BUT what if?!! They like it? I may faint. Recipe below for vegan cashew sauce 👇
1 cup raw cashews (soaked in hot water)
1 small onion
3 cloves garlic
3 tbsp nutritional yeast
2 tbsps sesame oil
1 cup of water
Salt to taste
If you want to elevate this recipe add in 1 tsp smoked paprika.
1. Sauté onion and chopped garlic in sesame oil.
2. In high speed blender add soaked cashews (without the water they were soaked in), nutritional yeast, and onion/garlic combo, plus 1 cup of water.
3. Add salt to taste. I was generous.
4. Blend till silky smooth.
5. Poor over spiral veggies in a sauce pan and warm. Don’t over heat or your spiral veggies will lose their form.
